1-1/2 cups minced clams
1/4 cup unsifted flour
1/2 teaspoon baking powder
1 large egg
1/4 cup cooking oil
1/4 cup butter
lemon wedges (optional)
Mix baking powder, flour and egg with clams. Blend well. Heat butter and cooking
oil in frying pan, over high heat, until it begins to foam (but be careful not to
brown it). Drop the clam batter into hot oil by tablespoons. Cook until fritters
are golden brown on one side, then turn and fry other side the same way. Remove fritters
and drain on paper towel. More butter and oil can be added to the pan, if needed,
to fry remaining batter.
