3 (7-1/2 oz.) cans minced clams
clam juice
1 T. soy sauce
1 T. cornstarch
pepper
1/4 cup green onions, minced
1 cup corn
1 cup tiny green peas, cooked
1/4 cup water chestnuts, chopped
tomato slices
Drain clams, and measure juice. Add enough clam juice to make 1 cup. Mix the cornstarch,
soy sauce and clam juice together. Cook over a low heat, stirring constantly until
thick. Stir in the pepper, green onions, corn, peas, water chestnuts and clams. Divide
into 8 individual dishes.
Top each with a tomato slice. Put under preheated broiler for about 5 minutes.
(Can be served in one big casserole dish, instead of
individual dishes).
